A tasty side dish. Source: Waitrose
Serves: 4
Ingredients:
200g pack of cabbage & leeks
2 red chillis diced
1 garlic clove finely sliced
25g pine nuts
1/2 lemon juiced
3 tbsp olive oil
1. Heat 3 tbsp olive oil in a large pan. Add the chilli, garlic and pine nuts and cook gently until the nuts have a little colour. Add the lemon juice.
2. Bring a pan of salted water to the boil. Add the cabbage and leek and cook for 5-6 mins until tender.
3. Drain well then toss with the oil.
This was a recipe on the back of the cabbage & leeks packet from Waitrose – it sound tasty so I thought that I’d give it try. I decided to use one chilli (being married to a Finn, I have to limited how spicy things are :)) but I could have used two as you the chilli wasn’t very hot. I used half a lemon but it was fairly lemony so I would recommend adding to suit your taste buds. I thought that this was a lovely side dish and although the packet said that it served 4 we shared this between the 2 of us with a grilled chicken breast and nothing else. A nice change to the normal steamed greens.
