An easy to make salad perfect for a light starter. Serves 6 as a starter.
Ingredients:
4 tbsp Olive Oil
1 small ciabatta torn into bite size chunks
160g sliced chorizo
250g baby plum or cherry tomatoes halved
2 tbsp balsmaic vinegar
pinch sugar
I large ripe avocado halved, stoned and sliced
150g baby bag leaf and herb salad
1. Heat 2 tbsp of oil in a large non stick frying pan. Fry the ciabatta for 8 to 10 mins tossing occasionaly until crisp and brown, then tip into a large bowl.
2. Lay the chorizo in a pan and dry fry for 2 mins until it gives out red oil. Add the tomatoes and cook over a high heat for 1 to 2 mins until they start to soften. Drizzle over the vinegar, add the sugar and season well.
3. Mix together, gentle toss the avodado, salad and remaining olive oil with the croutons. Spoon over the chorizo and tomatoes and drizzle with any pan juices. Serve immediatley.
This is a really easy starter – perfect for a dinner party or a light lunch. The ciabatta croutons can be made ahead and you can pre chop the tomatoes, avocado (just leave the stone in the bowl and it prevents it going brown), chorizo etc. A really tasty light starter.
