A great tasty veggie dish.
Serves 4-6
Ingredients:
1 packet Quorn chicken style pieces
3 pepper (red, green, yellow)
Olive Oil
1 tin black beans or 200g dried black beans (soak overnight and cook the next day until al dente) alternatively use kidney beans
Juice of 1-2 limes
1 bottle Nando’s Peri Peri Sauce (if you want the mix to be slightly drier only use half to 2/3 of the bottle)
1-2 tsp dried chilli flakes (depending on preference)
A few drops of tobasco (depending on preference)
Fresh bunch of coriander
Low fat sour cream or crème fraiche
Cheddar cheese
Wholewheat or Wheat Wraps
Instructions:
1)Defrost the Quorn chicken style pieces and fry in olive oil
2)Add the peppers and fry until cooked
3)Add the beans
4)Cover in Peri Peri Sauce
5)Reduce heat
6)Add tobasco and dried chilli flakes
7)Add juice of the limes
8)Leave for 10-15 minutes on a low heat, so all the flavours heat up and marinate the bean and quorn mix
9) Sprinkle with fresh coriander
10)Put wraps in foil and warm for 5-7 minutes in oven on low heat then fill them with the bean and quorn mix
11)Add sour cream and cheese and wrap up.
I have improvised and amended this recipe the more I made it and I absolutely LOVE it. It is a perfect summer dish as the lime and coriander make it really refreshing. Plus it is easy, quick and healthy and if you prefer to make it without the cheese, it makes a low fat meal.
