A lovely side dish that can be eaten with a large salad, meat or fish. Serves 4 people. Source: Fay makes it easy.
Ingredients:
2 butternut squash (approx 1kg each, halved lengthways
1 tbsp oilve oil
2 heaped tbsp pesto
2 heaped tbsp mascarpone
2 tbsp grated Parmesan
1. Preheat the oven to 180 (fan), 200 / gas mark 6.
2. Deseed the squash halves and cut the long narrow end off each half. Put the bowl like ends into on oven tray. Peel the long ends, chop into small cubes and add to the tray. Drizzle with lots of olive oil and bake for 45-50 minutes till cooked and tender.
3. IN a bowl mix the pesto and mascarpone togethre, season then stir through the small cubes of squash. Divide the mixture bewteeen the squash bowls and load some Parmesan on top of each.
4. Put back into the oven for 10 minutes till the Parmesan is melted and golden.
I love butternut squash, especially when roasted, so combine the squash with pesto & mascarpone and this is a winning dish 🙂 It’s very simple to make making it a nice easy side dish.
