We spied this Spicy Chorizo & Tomato Soup recipe on Gerrards Crossed based Sarah Loran Fitness Instagram Page and decided to give it a go! We can report back that it was AMAZING & super simple. I fried the chorizo with the onion & garlic at the beginning rather than adding the chorizo at the end but I am sure both ways are delish. Enjoy!

Serves 2

1 tin chopped tomatoes
2 garlic cloves
1 chopped white onion
100 ml chicken stock
1 tsp oregano
1 red chilli chopped
Handful of chopped chorizo.
6 chopped basil leaves.

Fry onion, chilli and garlic until soft. Add chopped tomatoes, chicken stock and oregano. Cook for 10 minutes. Whizz up in blender with basil.

Cook chorizo in separate pan and add to soup. Serve with a spoon of Greek yogurt.
