2 ripe avocado
6 cherry tomatoes, chopped
Squeeze of lime juice
Handful of chopped coriander
1/2 small red onion, diced finely
1. Half and stone the avocados, scoop out the flesh and roughly chop.
2. Put the avaocado, chopped tomatoes, lime juice, coriander and red onion in a bowl, season with salt and pepper and mix everything together.
3. Serve and enjoy.
