This is a really easy pate to make and tastes so good. It’s a Claire Macdonald recipe from her ‘Fish’ book, enjoy!

Serves 6

450g cream cheese (you can use reduced fat Philadelphia Lite if you like)

1 garlic clove, skinned and finely chopped

1 tablespoon lemon juice

110g fresh prawns, chopped

8 rashers of smoked streaky bacon, grilled until crisp, then broken into bits

A pinch of salt

Black pepper to taste

2 tablespoons chopped parsley (optional)

  1. Whizz the cream cheese in a food processor with the garlic and lemon juice until smooth.
  2. Scrape this into a bowl and mix in the chopped prawns, crispy bacon bits, salt, pepper and parsley (if using).
  3. Serve with granary bread, or crackers.
