These crunchy biscuits have been a family favourite for generations, my gran still makes them for my kids and she’s now in her 90’s.
2 cups porridge oats
1 cup sugar
1 cup self raising flour
1 teaspoon bicarb soda
1/4 teaspoon ground ginger
1/4 teaspoon mixed spice
1/4 teaspoon cinnamon
Pinch of salt
2 oz butter
2 oz lard
1/4 teaspoon treacle
3 teaspoons golden syrup
1 tablespoon water
Preheat oven to 180 deg C.
Melt the butter and lard then add all the rest of the ingredients.
Roll into little balls and put on greased baking tray.
Bake for 20 minutes or until golden brown in colour.
I used to make these with my gran when I was little and loved get my hands messy. I now make these with my kids and they really enjoy making (and tasting) them. They’re super quick and easy to make, we normally make a double batch as they never seem to last long in our house.
