(Makes 20ish, keep in the fridge for up to a week, freeze for up to a month)
1/2 cup cashew nuts
1 cup pecans
1 cup oats
10-14 pitted dates (depends on size of dates)
1/2 tsp – 1 tsp ground ginger (add more if you like it spicy!)
1/2 tsp mixed spice
1-2 tbsp 100% pure maple syrup
Combine all ingredients in a blender and blitz until they’re smooth and starting to form a big ball. Roll them out into ping pong sized balls and lay flat on a tray or plate and stick them in the fridge for 20-30 mins. Then you can transfer them into a less space-wasting container and take one out to nibble on as you fancy!
SPECIAL TIP: Lightly wet your hands before you start rolling… you’ll avoid getting too much ginger gunk stuck to them!
SPECIAL TIP TWO: If you’re prone to mindless snacking, I thoroughly recommend sticking these in the freezer… they’re very difficult to eat straight from the freezer!! (Yes, I tried…) Take them out to defrost one or two at a time.
