225g Plain Flour

200g well chopped mango

110 caster sugar

85g coconut oil melted and cooled

2 large eggs beaten

30g shredded coconut

3 tsp baking powder


1.Preheat oven to 180

2. Grease loaf tin with coconut oil and line base

3. Sift flour and baking powder together and mix lightly

4. Mix egg, cooled coconut oil ad sugar and then add mango

5. Fold flour mixture into egg mixture and add shredded coconut

6. Pour mixture into baking tin and bake for 35-45 mins until a skewer comes out clean and the loaf is spongy to the touch.

7. Cool on a wire rack and enjoy


You can make cupcakes if you dont have a loaf tun – reduce the cooking to time to approx 12-20 minutes depending on size. You can also try with ripe banana and or spelt flour or coconut sugar
