My favourite healthy way to kick off a dinner party!

 

You will need:

1 x 410g can of chickpeas, drained

1 x clove garlic, crushed & softened with 1/2 tspn salt

Juice of 1 lemon

Rind of 1 lemon

30 g of fresh coriander

1 tbsp of lemon infused olive oil or plain olive oil

Salt & pepper to taste

 

Place all ingredients in a food processor and blitz until a smooth paste is created.

Transfer to a serving bowl and serve with carrot and celery batons.
