This is a light version of the traditional Eton Mess as you replace half the cream with Greek yoghurt.
Serves 4
Ready in 15 minutes
Ingredients:
150ml whipping cream
150ml 0% Greek yoghurt
1 tsp vanilla extract
2 tbsp icing sugar
300g small strawberries
50g ready made meringues crushed
1. Whip the cream and yoghurt with the vanilla and 1 tbsp of the icing sugar
2. Put half the strawberries in the food processor with with the other tbsp of icing sugar and whizz to a puree. Quarter the rest of the strawberries
3. Layer up the cream mixture, crushes meringue, strawberries and puree in glasses ending with some strawberries and puree.

I made this for dinner tonight and it was so easy to make. We had a large family meal so doubled up the recipe, which was so simple. Everyone loved it and were looking for second helpings 🙂 The recipe is very straightforward and it doesn’t really need any prep beforehand, it can all be done as you need it. The addition of the greek yoghurt and whipping cream resulted in a really light dessert, which suited the tastes of both young kids and grown ups. Will definitely be making this again!
This is a lovely dessert and perfect if you want something quick and easy. I made it for when we had friends over to dinner and had pre cut the strawberries and made the puree before they came so it only took a few minutes to throw together 🙂 Great dessert for relaxed entertaining!
