Ingredients
300g/11 oz frozen raspberries or blueberries
2 ripe bananas
350ml/12 fl oz coconut milk
2 tbsp honey
handful fresh mint
Serves 4
1. Blend 300g/11 oz frozen raspberries or blueberries, 2 ripe bananas, 350ml/12 fl oz coconut milk, 2 tbsp of honey and a handful of mint if desired.
2. Pour the smoothie into the glasses and leave to set for a short time before serving.
There has been some bad press about coconut oil and milk in the past but according to Emiko who co-authored Tidy the Temple there is a general acceptance that Coconut milk is an excellent substitute for cow’s milk because it is easy to digest, rich in antioxidants and contains an abundance of vitamins and minerals. It really is a lovely dessert – the after taste that you get from the mint is divine. This is definitely something that I will be making again and again.
