A tasty twist on breaded fish. Serves 2.
6 tbsp desiccated coconut
3 tbsp plain flour
2 sustainably sourced cod fillets, or other firm white fish, such as haddock
1 egg, beaten
3 tbsp vegetable oil
Dressing:
2 tbsp mayonnaise
1 tbsp sweet chilli sauce
Salad of your choice
1. Mix the coconut and flour together in a shallow dish. Dip the fish fillets into the beaten egg, then into the coconut-flour mixture to coat. Heat the oil in a frying pan until hot, then add the fish and fry for 3-4 mins on each side until cooked through.
2. Mix together the mayo and sweet chilli sauce and either serve as a dip with the fish or as a dressing to your salad.

I always struggle to make cod taste a bit more exciting, I stumbled across this recipe and its now become a firm favourite in our house. The coconut crumb makes the fish really tasty, and the sweet chilli dressing can either be used as a dip for the fish or over the salad. It’s really quick and easy to make, perfect for a mid week meal.
