A real zingy lime pie, that’s easy to make.
Serves 6 – 8.
300g Chocolate chip digestive biscuits
1 tbsp cocoa powder
50g soft butter
1 can condensed milk
300ml double cream
1 small square of chocolate
1 x 23cm spring clip tin
1. Put the biscuits, cocoa and butter in a food processor and blitz until fine crumb consistency. Press the mixture into the tin and press onto the base and approx 5cm up the sides. Put in the fridge to chill.
2. Zest the limes and set aside to use for decoration later. Put the condensed milk and juice from the limes in a bowl and mix together. Add the double cream to the mixture and whisk with an electric whisk until thick. Spoon the mixture onto the biscuit base and chill the pie until firm (best to leave overnight).
3. When ready to serve, remove the pie from the tin (but leave on the base), grate the chocolate on top and sprinkle with the lime zest.
