This is Lindsay’s from Veggie Super Power’s go-to smoothie recipe she make’s it week after week. She especially likes it for a quick to make & easy to eat breakfast before a long weekend run.

She tops it off with Bio & Me granola (which can be bought at The Kitchen Larder in Chalfont St Peter aswell as Sainsburys & Waitrose). It makes a perfect smoothie bowl topping as it is lovely & crunchy and has nice big clusters- not too sweet and packed with plant-powered fibre and nutrients. Such a good start to the day!

Ingredients (serves 2):

1-2 cups almond drink (or milk of choice)*
1/4 cup oats
1 tbsp ground flax
1 tbsp chia seeds
2 tbsp almond butter
1 tbsp cacao powder
1 tsp cinnamon
1 tsp vanilla extract
1 frozen banana
1 handful spinach
Toppings of choice

Place in a blender, starting with the smaller amount of liquid and adding more if you don’t want it so thick.

*making your own is so easy, saves packaging, makes a much thicker creamier product with zero extras, just almonds and water. Soak 1 cup almonds 8 hours or overnight. Drain and RINSE then blend with 4 cups water. Pass through a muslin bag/cloth or fine sieve. Store in fridge for 5 days or freeze in smaller portions. Mine never lasts 5 days!
