This is a very quick, cheat version of black forest gateau using shop bought brownies so all you have to do is arrange them on the plate, drain the cherries and whip the cream, you can even buy ready whipped cream but don’t be tempted to use the squirt cream as it will not keep it’s shape and within a few minutes it will collapse.
Ingredients:for approx 20 brownies
1 box mini brownies
1 tin black cherries in syrup or kirsch
1. Lay the brownies on a serving plate
2. Drain the cherries and leave to one side in the sieve as they take a while to drain thoroughly
3. Whip the cream until it’s stiff enough to hold it’s shape.
4. Either pipe a dollop of whipped cream onto each brownie or if you don’t have a piping bag just spoon a teaspoon of whipped cream onto each one.
5. Finish with a cherry
Ginger – use a Jamaican Ginger Cake, cut into squares, top with a sliver of stem ginger and dollop of cream and a raspberry or strawberry.
Flapjack – top with thick greek yoghurt and a variety of fruit such as strawberries, raspberries, chunks of mango or kiwi,
Christmas cake – cut into tiny squares and serve with either slivers of marzipan and drizzle with icing or on a cocktail still with a chunk of wensleydale cheese.
