Healthy banana muffins 🙂

3 medium sized bananas or 2 large bananas
â…“ cup honey
½ cup vegetable oil
¼ tsp cinnamon
1tsp vanilla extract
180g whole wheat self raising flour
1 ½ tsp baking powder
a pinch of salt
4 tbsp sunflower seeds
4 tbsp sultanans

Preheat oven to 180C. Lined cupcake tins with paper cases.
Slice banana and put them into a mixing bowl. Mash them till they reach a smooth consistency.
Add honey, oil, cinnamon and vanilla extract. Whisk to combine.
In a separate bowl, sieve the flour and add baking powder, mix well.
Pour the wet ingredients into the flour, fold with wooden spoon to combine. The batter should be quick thick. Be careful not to overmix.
Fold sunflower seeds and sultanas into the batter.
Put 2 tbsp of mixture into each paper case.
Bake for 15 – 18mins. Test with skewer to ensure the bread is cooked through.Â
This was a recipe recommended to me by a mum at school. We made them at the weekend – they were so easy to make and perfect for getting kids involved with cooking. The muffins were delicious – very moist and more-ish! The children really enjoyed them and we will definitely be making them again.
