Lovely moist cupcakes, easy to make and a good recipe for getting the kids involved in baking.
Makes 12 cakes
What you need:
100g butter, soft
2 eggs
175g caster sugar
225g self-raising flour
1 tsp baking powder
3 tbsp milk
3 very ripe bananas, mashed
50g chocolate chips
Decoration: 30g chocolate, melted
1. Preheat the oven to 180C (160C fan) and line a 12 hole muffin tin with paper cases.
2. Put the butter, eggs, sugar, flour, baking powder, milk and bananas into a bowl and beat until the mixture is smooth. Add the chocolate chips and mix together to make sure they are evenly spread in the mixture.
3. Spoon the mixture into the cases (should be approx half full), and bake for 25 mins, or until golden brown and well risen. Remove the cakes from the tin and allow to cool.
4. Drizzle the melted chocolate over the cakes, allow to set then enjoy!
These cupcakes are so simple to make, I got the kids involved and they loved them. Great for using up over ripe bananas. The cakes are really moist and delicious, perfect for a tea time treat or to pop in the kids lunch box.
